Cavalary: Anyway, back on topic, on a more analytical approach, judging pros and cons, and if the barrier for entry is just two games, I'd say Knights of the Old Republic comes up on top for me. But when it comes to overall impression left despite the cons and frustrations, Gothic, though this is also hampered by the fact that I just fully played the first, NotR making 2 too hard for me and I never played 3 (ignoring Forsaken Gods or Arcania, those don't count). Did play the first Risen, but it's not a reason to hold it in such a high regard, so just going by Gothic 1 and (as far as I could get) 2.
Yeah, there are a lot of series that have some great games but then IMHO "crash"...

Gothic... with 3 and 4. While I enjoyed Arcania -- and since it's been removed from canon -- it was sold originally as Arcania: Gothic 4 (at least in US) and was objectively pretty bad

Call of Juarez.... Gunslinger and Bound in Blood were great, but CoJ1 and CoJ The Cartel were mediocre to bad

Fallout Black Isle games
Starcraft series
half life series
heroes of might and magic series until 5
diablo series except 3
warcraft series
unreal + tournament
quake series
the elder scrolls series
I'm adding my own personal rule (that no one else has to apply) that I use: a series needs more than 2 games. Once is chance, 2 games can be coincidence, 3 games is a true series. So Jagged Alliance, my all time favourite games I'm not including here. So a 2 game series that's had no entry for 15 years isn't much of series no matter how good the individual games. The following are the ones that I still look forward to each new entry.

Dark Souls (including Demon's and Bloodborne) is my absolute favourite. No other games hold my attention during a play through and reward good play by being easy when you play well. Even the worst game in the series is still excellent.

Forza racing series. Takes care of all my racing needs for 2 years until the next one comes out, I'm always playing them. They never drop a frame and run perfect. How Gran Turismo has fallen in comparison.

Saints Row for totally nuts open world sandbox action. Though Sunset Overdrive is better in every aspect, it's not a series.

Assassin's Creed because I love the historical based worlds and still look forward to playing each one.

Gears of War for simple violent shooting things fun.

5 Star General series for simple fun turn based strategy.

Hitman (even Absolution). For similar reasons to Dark Souls.

Well, if we're to go with more than 2 games as the threshold for entry, that'd rule KotOR out, but would technically leave Gothic in. But since I only played the first two, I couldn't consider them for myself.
And I do rather agree that three should be the minimum, two not being so much of a "series" but maybe more a case of developers either really finishing the first game, getting in all the content they originally had in mind, or making the game they really wanted to make the first time around but couldn't, or on the contrary, just throwing something together to cash in on the success of the first, or reusing the assets to try to recover some of the losses. But three tends to be a different story, often with an actual intent of a series.

So, series that I played at least 3 different games from (not counting expansions and such)? May go with Quest for Glory there, for 1-3, since 4 quickly put me off (and I never tried 5, read reviews back in the day and said no way). But there's a lot of nostalgia there, doubt I'd still say so today. But it's that or none, wouldn't go with any other.
Yeah, Might and Magic 6 seemed great and also played 1 and 7, but abandoned both early on, so wouldn't put the series that highly based on that.
Then, let's see, Age of Wonders 1, 2, Shadow Magic, sure, nice enough, but not something to file under favorite really. Did play 3 Championship Manager games plus Football Manager 2005 but only clearly identified one of the CMs and anyway, nope. It's possible that I played 3 Civilization games, if you also count Call to Power then quite certainly, but didn't even identify them exactly again, other than 4, and nah. Divine Divinity, Beyond Divinity and Divinity 2, but only finished DD and it was nice and so was D2 as far as I got but BD seemed crap (though I stopped early, may return someday, who knows) and actually DD may worm itself into favorites, albeit not towards the top, but not enough. Heroes of Might and Magic 1-4 and Tribes of the East, and unlike most I did really like 4 but as a result the rest were generally frustrating. Larry 1-3, 7 and 8, but no way. Monkey Island 2-4, but only finished 4 and definitely not. And very likely that I played at least 3 Worms games but only clearly identified one and nah.

toxicTom: Saying they're not and treating them as if they're not PC games are two different things, and dtgreene wrote the latter to which I chimed in. It's just a little psychological trick to apply to oneself. Of course I'd like to play games like RDR2 or Doom 2016 too, but seeing them as "not available for my system" and be done with it is easier than constantly thinking about giving up the DRM free stance or being tempted to pirate them.
I mean if it helps you then sure, whatevs. To say as she did "they're not PC games" is silly though, and what I was replying to. Also I don't think straight up piracy is justified at all, but you could always buy the game and then download a DRM free backup. Zero morally wrong with that, IMO.
For adventure games.
