I just tried BG3 and it looks amazing but it is currently unplayable it completely locks up for a couple seconds so frequently. I closed everything have Win10, GTX 1080, 16GB ram , nvme ssd drive.. I play almost every game on ultra on my computer but even when I drop the settings in BG3 down to 'medium' I get constantly frozen. Any ideas?

sounds like your C drive is full or locked

Well, it's an alpha version of the game...so bugs are expected. But did you by chance install this onto your C:\ partition under Program Files? If so, I advise you to reinstall the game into another folder if you do not have any other partitions except C:\....C:\Baldur's Gate 3 would be fine. But if you have other HDDs and/or partitions, then by all means install your games on another physical drive or partition other than C:\. Installing games to C:\Program Files can facilitate certain OS security checks in some cases that have been known to interfere with the operation of games installed there.

And like USSNorway suggests, make sure you have room on your drive...;)

Also, if you are trying to play this game multiplayer than that also could be your problem.
