It looks like there's a couple of races missing from the official 5e rules.

Tortle (okay this is a completely broken race but still)
Dragonborn (I was hoping to play the same character as in my tabletop games, dragonborn cleric)
Githzerai (strange as the githyanki are represented and technically they're one race called Gith)
Given the theme of the game I get why you choose Githyanki :D but for those who want to play the non-asshole Gith race they're outta luck.

There's also a few of the XGE races missing like bugbears and all that but that's no wonder.

Will these be added after beta or as DLC or not at all?

*EDIT* Aaaaand I just read the FAQ for the Early Access. So the only relavent question is wether additional races will be DLC or added later. And I'm guess that is a question the cool people at Larian can't answer as of yet.

I believe they will add more races after Early Access, but I don't think it will be DLC.
I think they will add a whole game, after early access.

They arleady said that all races and classes from players handbbook will be avaliable in full game. And they also said that they maybe will give us also some races from expansions

I'm sure at least a few others are coming.

Look through the deities available to clerics - there's two who're specific to entire races, but those races aren't available (yet) as PCs:

Garl Glittergold (Gnomes)

Laduguer (Duergar)

...

I am sure that, by the time the game launches, we'll have more races and classes (and subclasses - I'm slightly disappointed that Warlocks only have one Pact and two Patrons so far, for example). Without them being in a DLC, though it wouldn't surprise me to see DLC adding yet more.

I'm hoping we'll at least have all the PHB races / classes / etc in the base game (plus Gith). Maybe stuff from sources like XGE, Volo's, and MTF can come in an expansion/DLC.
I think I've heard Swen in an interview saying that more classes will be available in the final game. So there is a chance that more races could be delivered too.

Basically, that's either a Cleric with the Grave domain, or a Wizard of the college of Necromancy. Or mmmaaayyybbbeee a Warlock with an Undead patron.
Of all the missing races you skip gnomes in your list.
