How would I go about resetting a character's level so I can switch him to another class? I'm wanting to change a level 9 character. Do I just open up shadowkeeper and change his level back to 1 and then change his class?

You probably could, yeah. Just remember to change the base hp and weapon profs when you do it, as well.
Better to set the level to zero, to make sure you get the 1st level bonusses of the class. Also your hitpoints should be set to 1 or you'll have too many at 1st level. If you mind cheating that is :)
Yea I definitely want the character to be legit as if my character started in this new class to begin with. Also I'm switching this character to a thief kit. Once I set his level to 0, what do I set his thieving points at?

Here's what I did: I just created a brand new level 1 assassin and then just matched his stats to my other character. Seems to have worked. The only issue left his my character's THACO at level 1 isn't matching up with the new created assassin. It's supposed to be 19 but instead its 16. Not sure what to do about that.

There's a THAC0 field in Shadowkeeper you can adjust, as well. It's the character's base THAC0, before any bonuses or penalties are added in, so a level 1 character should have a 20 there.
