Almost everything is cut off, and some dialog boxes you can't even reach with the mouse.

That must be a graphics issue on your end. I can play just fine at 7680x1440 (3x 1440p monitors in Nvidia Surround), and I haven't seen such cut-off issues since patch 1.06.
My left and right screen is black in the menus, but ingame works perfectly fine.
Have you tried playing in windowed borderless mode?
