I just requested a username change from GOG and something weird happened.
I got an email which lists my real first and last name. What I cannot understand is where they got my name as I never gave it to GOG, it's not listed anywhere on my GOG profile and it's not even the same name I use on my email address. The only way I ever mentioned my name is by entering my payment card info, but I don't know if they can see people's names that way.

They might use your real name when you request a username change, since your old username won't be relevant anymore. Where they got your real name I guess is the question, but from your CC info certainly seems to make sense. I use my wife's credit card for most online purchasing and certainly have seen her name here and there on Steam, Amazon, etc. I don't think it's that weird.

My email is name.surname@smth.com, so they could've gotten it there or from the payment card. Those are the only two places I've given it.

Agreed.
GoG has some access to your payment data. For example, if you request an email change from a different email than your original - GoG may require you to confirm your identity using info from your payment method. They may not access to your whole CC number directly since a token is generated for that - they would have access to basic stuff (like your name and last four of your CC).

Anytime you do a credit card transaction, the processor has access to info like that. If something goes wrong it's much easier to identify that a particular transaction is the right one with that info.
