This past week, there was a day or two that GOG was under maintenance according to the website (there was a popup banner at the foot of the site) and after that, Galaxy stopped tracking game activity completely.
Achievements and milestone playtime no longer shows.

I tried with a game I've played before and the last activity is from two years ago and today's achievements don't show.
I also tried with a new bought game and the feed still has the "Build your activity feed" message.

Did this happen to someone else or is it just me?

I think it's because of this.
Happened to me too. I installed a game recently, it works, as does overlay and cloud saves. But my playtime didn't get tracked.
Same here. Galaxy client stopped tracking game activity 4 days ago. Tested about 5-10 games.

It seems to be fixed now, my playtime from yesterday was added.
go to Settings ---> Integrations --> Manage --> Privacy

set everything to ' only me '

Fixed for me also. Playtime from previous days was added.
Yes, it seems to be working now.
All the achievements show up on the activity panel.
Still does not work for me :( Stopped working 21 days ago :(
