Take a look at the Mod list sticky above and read the descriptions.
none, at least for the first playthrou ...

later look at the modlist here in the forum and decide yourself what to tweak/mod (resp. what you didn't like and want to change).

For my money the tool tip mod is essential and the crafting weight reduction mod saves excessive hassle being over the weight limit without completely removing the need to sell excess stuff. I like the 30 min duration on potions even if I guess it is kind of a cheat and I guess the quest 'fix' mods can be useful if you accidently use up / miss an item.

Being that it's easy to add and remove mods I'd say try out any that you think sound interesting.

The most important thing, they are not that complex and easily removable(not like Oblivions, Morrowind, Fallouts etc.

no one in my opinion, anyway the full list is sticked in this forum if you wanna check.
You wouldn't know what mods you want until you play the vanilla game at least once.
The no weight mod is the one I jumped on right out of the gate. I don't find tedium a fun aspect of gaming, and running back and forth from dungeons to merchants just to lighten the load is tedious for me. YMMV.

This ^^ Need to at least play all or some of the Vanilla version to get a feel of what you deem is lacking or you are personally having issue with.

This is the mod I also got. Here is my logic: Ingredients way far too much. You can't sell anything for a profit and merchants resale your items for 20x what they paid you for them.

If there was a storage locker in every town, I prob would have skipped the weightless mod. But this is a must grab, IMO.

Funny thing is, I'm carrying around a ton of crap, as I've found very little need for money so far, so haven't felt the need to sell a lot of stuff (I have sold some just to clean up the inventory a bit, but not because I needed cash). I'm not finished chapter 1 yet though, so maybe there will be a need for money later on.

No need to explain. Your game, your playstyle, who are we to judge? That's why there a slew of mod variations to choose from. Love to the Modders /respect

Unless you plan on opening a tannery, a textile, or lumber mill in Foltsam then you really don't need any of the weight mods. If there was a mod that fixed the need for the slow stat-scrolling in the inventory, then I would suggest it. I pretty much like everything else as it is.

I really like the mouse over feature.

You ought to play a while into ch. 1 at least to know what works and doesn't for you in the vanilla form. However, I can think of absolutely no reason to not use the tooltip mod. http://www.gog.com/en/forum/the_witcher_2/tooltips_mod/page1
You will see why after about 15 minutes of play.

Regarding weight restrictions:

I still use a mod to increase carry capacity. Honestly, now that I know what I need and don't, including how many orens, it is unnecessary. (I accidentally set it back to original and didn't notice until 3/4 through Ch. 1.) Some people may be patient and/or smart enough to use default inventory limitations from the get-go. Not I.
